In response to Leona's comment, Chef Ann Cooper (The renegade lunch lady) is making a huge change on the west coast! She had made systemic changes to the Berkley area (with Alice Waters) and now in Colorado is planning to do the same!

Don't make us tighten our belts on child nutrition programs while the girth of the nation grows. The government spends $1 million per soldier in Afghanistan, yet barely spends $1 on the food in a school lunch.
I recomment that you read this excellent article from Huffington Post. Here is the link: http://www.huffingtonpost.com/debra-eschmeyer/state-of-the-unions-s...

Jaime Oliver, the British celebrity chef who nearly single-handedly brought healthier food to British school children, was been awarded the TEDPrize for his efforts to do the same in the U.S.

Why has America not produced a home-grown chef, other than Alice Waters, who can do what Oliver is doing in West Virginia and his new television show Food Revolution?
